Merlin has been the owner of Dick & Jenny's since April 2, 2018; however, he has been in the NOLA restaurant business his entire life.
As a young boy, he worked under his mother's instruction at Bangkok Cuisine, one of the first Thai restaurants in Louisiana. He was the owner of LA Thai Cuisine from 2000-2008 and continued his success along with his mother and sister at LA Thai Uptown from 2008-2014. Although he took a break as Chef to share his restauranteur knowledge by opening, developing, and managing other successful establishments in the New Orleans area, Chef Merlin has always wanted to explore the Cajun side of his roots.
He is now fulfilling his dream by creating Cajun Creole culinary dishes with just a touch of Thai influence. His father, Merlin Sr, a French Cajun, and his mother, Punnee, the famous NOLA Thai restauranteur, Chef Merlin has the gift of creating dishes from both culinary worlds, evidenced by the "magic" that comes from his kitchen!
